Technical info:

Variety: Pinot Noir
Exposure: South, Southeast
Vineyard age: Planted 1995
Geology: Turonian type, pure chalk covered with sedimentary clay.
Vinification: Cold steeping for 5 days at about 12°C, then traditional fermentation.
Maturation: 70% of the harvest in stainless steel vats.
Ageing: This wine exalts its full fruitiness and finesse in its early years. 
     
 
Tasting:
Serving temperature: 15° to 16°C
 
Colour: a fine purplish red, deep and with a lovely density
Nose: opens on stone fruits (cherry) and then  continues with aromas of blackcurrant and blackberry.
In the mouthfeel: the flavours are harmonious with liquorice notes on a very comfortable structure. A spicy, powerful style brimming with energy
Food pairing: To be drunk with red meats, game, cheeses and all dishes calling for a quality red wine.
